  • 2 pieces chicken breasts Boneless and skinless
  • 8 oz pasta Of your choice (penne or fusilli recommended)
  • 1 cup Boursin cheese Choose your favorite flavor!
  • 1 cup chicken broth
  • 1/2 cup heavy cream Can substitute with lighter options
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • to garnish fresh parsley Chopped

Instructions
 

Preparation

  • Cook the pasta according to package instructions. Once al dente, drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then place them in the skillet. Cook for about 5-7 minutes on each side, or until cooked through and no longer pink in the center.
  • Remove the chicken from the skillet and let it rest for a few minutes before slicing it into bite-sized pieces.

Cooking

  • In the same skillet, pour in the chicken broth and bring it to a gentle simmer. Stir in the Boursin cheese and heavy cream, mixing until smooth and creamy.
  • Toss in the cooked pasta and the sliced chicken, stirring well to coat everything in the sauce.
  • Heat through for an additional 2-3 minutes until warmed and well combined.

Serving

  • Serve hot, garnished with freshly chopped parsley for color and freshness.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of chicken broth to maintain creaminess. Can be frozen for up to 3 months.
