  • 8 oz pasta (any shape) e.g., rotini or penne
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls, halved
  • 1 cup fresh basil leaves
  • 1/2 cup pesto sauce
  • to taste Salt and pepper
  • 2 tbsp olive oil (optional) for added richness

Preparation

  • Cook the pasta according to the package instructions. Once it’s al dente, drain and set aside to cool.
  • In a large bowl, combine the cooled pasta, halved cherry tomatoes, mozzarella balls, and basil leaves.
  • Pour the pesto sauce over the mixture. Toss everything gently until it’s well coated.
  • Season with salt and pepper to taste, mixing again for an even distribution.
  • If you’d like, drizzle with olive oil and toss once more for extra flavor.

Notes

This salad can be served chilled or at room temperature. It stores well in the refrigerator for 3-4 days as the flavors deepen. Don't freeze the salad as the vegetables and cheese can change texture upon thawing.
