  • 1 bunch Asparagus Choose firm and vibrant green asparagus.
  • 1 tablespoon Olive oil
  • 1 cup Fresh mozzarella cheese Can be substituted with vegan cheese.
  • 1 cup Cherry tomatoes
  • 2 tablespoons Balsamic glaze Add extra for drizzling before serving.

  • to taste Pepper
  • optional Fresh basil For garnish.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Clean and trim the asparagus, placing it on a baking sheet.
  • Drizzle with olive oil and season with salt and pepper.

Cooking

  • Roast the asparagus for 15-20 minutes, or until tender.
  • While the asparagus roasts, halve the cherry tomatoes and mozzarella.
  • Once the asparagus is done, remove it from the oven and layer on the cherry tomatoes, mozzarella, and a drizzle of balsamic glaze.
  • Garnish with fresh basil if desired and serve warm.
