Ingredients
  

Meat and Vegetables

  • 1.5 pounds lean ground beef Can substitute with ground turkey or chicken.
  • 1 each red bell pepper, seeded and chopped
  • 1 each yellow onion, chopped
  • 1 ounce taco seasoning mix

Biscuit Base

  • 2.5 cups biscuit mix (like Bisquick)
  • 1 cup water
  • Cooking spray (like Pam)

Creamy Topping

  • 0.5 cup sour cream Can substitute with Greek yogurt.
  • 0.5 cup mayonnaise
  • 4 ounces diced green chiles, drained
  • 1.5 cups shredded cheddar cheese (Fiesta blend), divided
  • 1 teaspoon garlic powder

Finishing Touch

  • 0.5 cup mild salsa

Instructions
 

Preparation

  • Preheat the oven to 350℉.
  • In a skillet, sauté the ground beef over medium-high heat until it is no longer pink. Drain any excess fat.
  • In a mixing bowl, combine the biscuit mix and water. Mix until well incorporated and spread it evenly across the bottom of a sprayed 9 x 13” casserole dish. Bake for about 5-8 minutes until set and lightly golden.
  • Add chopped onions and bell peppers to the cooked beef, and cook for about 4 minutes. Stir in the taco seasoning mix and remove from heat.

Assembly

  • Spread the beef and veggie mixture evenly over the biscuit layer.
  • In a medium bowl, combine sour cream, mayonnaise, drained chiles, ¾ cup of shredded cheese, and garlic powder. Mix until smooth and spread it over the beef layer.
  • Dot the top with spoonfuls of salsa and sprinkle the remaining cheese evenly on top.

Baking

  • Return the casserole to the oven and bake uncovered for 30 minutes, or until hot and bubbly.

Notes

You can customize this recipe with different meats or vegetables as desired. Leftovers can be stored in the refrigerator for up to 3-4 days or frozen for up to 2 months.
