Ingredients

Pasta Salad Ingredients

  • 8 oz rotini pasta Alternatively, use another pasta shape.
  • 2 cups cooked, diced chicken breast Rotisserie chicken can be used for a quicker option.
  • 1 cup romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Parmesan cheese, grated
  • 1/2 cup Caesar dressing Mix with sour cream for a creamier texture, if desired.
  • Salt and pepper to taste
  • Optional: croutons for topping For added crunch.

Instructions

Preparation

  • Cook the rotini pasta according to the package instructions. Once cooked, drain the pasta and rinse it with cold water to stop the cooking process.
  • In a large bowl, combine the cooked pasta, diced chicken, chopped romaine lettuce, and halved cherry tomatoes.
  • Drizzle Caesar dressing over the mixture and toss it until all ingredients are well-coated.
  • Sprinkle with salt and pepper to taste for an extra flavor kick.
  • Serve the salad in bowls, topping each with croutons if you want an added crunch.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Keep the dressing separate until serving to avoid sogginess. Feel free to customize with additional veggies or different dressings based on your preferences.
