  • 1 pound chicken breast
  • 2 cups mixed vegetables (carrots, peas, green beans) Feel free to customize
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Preparation

  • In a large pot, heat 1 tablespoon of olive oil over medium heat.
  • Add the chopped onion and minced garlic, sautéing until both are translucent and fragrant.
  • Toss in the chicken breast, allowing it to cook until browned on all sides.
  • Pour in 4 cups of chicken broth and a can of diced tomatoes. Bring the mixture to a boil.
  • Add the 2 cups of mixed vegetables and 1 teaspoon of Italian seasoning. Reduce the heat and let it simmer for about 20 minutes, or until the chicken is fully cooked.
  • Remove the chicken from the pot, shred it using two forks, and return the meat back to the soup.
  • Adjust seasoning with salt and pepper to taste, and serve hot.

Notes

Garnish with fresh herbs like parsley or thyme. Accompany with crusty bread or a light salad. For a creamier texture, stir in a splash of heavy cream or coconut milk before serving.
