Pasta and Vegetables

  • 8 ounces pasta (fusilli or penne) You can use any pasta shape.
  • 1 cup cherry tomatoes, halved Consider using heirloom tomatoes for added flavor.
  • 1 cup mozzarella balls, halved Substitute with plant-based cheese for a vegan option.
  • 1 cup fresh basil leaves Fresh ingredients enhance flavor.

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • to taste Salt and pepper

Preparation

  • Cook the pasta according to package instructions until it’s al dente. Once done, drain the pasta and set it aside to cool.
  • In a large mixing bowl, combine the cooled pasta with the halved cherry tomatoes, mozzarella balls, and fresh basil leaves.
  • In a separate small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until well combined.
  • Drizzle the dressing over the pasta mixture and toss carefully to ensure everything is evenly coated.
  • Let the salad chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.

Notes

Serve in a large glass bowl for a beautiful presentation. Garnish with extra basil or Parmesan for added flavor. Pairs well with grilled chicken or shrimp.
