Ingredients

  • 4 cups mixed salad greens
  • 1 cup black beans, rinsed and drained
  • 1 cup corn (canned or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 1 avocado, diced
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup red onion, sliced
  • 1/4 cup cilantro, chopped

Dressing and Flavorings

  • Juice from 1 lime fresh lime juice
  • 1 cup salad dressing (ranch or vinaigrette) Choose based on preference.

Protein

  • 2 cups cooked chicken, diced Can substitute with grilled steak, shrimp, tofu, or chickpeas.

Preparation

  • In a large bowl, combine mixed salad greens, black beans, corn, cherry tomatoes, diced avocado, sliced red onion, and chopped cilantro.
  • Top the salad with the diced cooked chicken and shredded cheese.
  • Drizzle fresh lime juice over the top, followed by your preferred salad dressing.
  • Toss everything gently to blend the ingredients together.
  • Serve immediately to enjoy the fresh flavors!

Notes

For best results, add the dressing and avocado just before serving to prevent browning and sogginess. Store leftovers in an airtight container for up to two days.
