  • 4 pieces chicken breasts Boneless and skinless recommended.
  • 1 cup sundried tomatoes, packed in oil, drained and chopped Can be substituted with roasted red peppers.
  • 1 cup heavy cream Can replace with low-fat cream for a lighter version.
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper To taste.
  • Parmesan cheese For serving.
  • Fresh basil For garnish.

Preparation

  • Place the chicken breasts in the slow cooker.
  • In a separate bowl, mix together the sundried tomatoes, heavy cream, chicken broth, Italian seasoning, salt, and pepper until well combined.
  • Pour the sauce over the chicken in the slow cooker, ensuring they are well-coated.

Cooking

  • Cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.
  • Once done, shred the chicken in the sauce if desired for extra flavor absorption.

Serving

  • Serve over pasta, rice, or mashed potatoes, topping with Parmesan cheese and fresh basil.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Can freeze for 2-3 months. For a spice kick, add red pepper flakes.
