For the chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup honey can be adjusted to taste
  • 1/4 cup soy sauce can use low-sodium or coconut aminos for gluten-free
  • 4 cloves garlic, minced
  • 1 teaspoon ground ginger can substitute with freshly grated ginger
  • Salt and pepper to taste
  • Chopped green onions for garnish adds crunch and freshness

Preparation

  • In a mixing bowl, combine the honey, soy sauce, minced garlic, and ground ginger. Stir until well blended.
  • Arrange the chicken breasts in your Crockpot and season with salt and pepper.
  • Pour the honey-garlic mixture evenly over the chicken.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and cooked through.
  • Once done, shred the chicken in the sauce for maximum flavor.
  • Serve garnished with freshly chopped green onions.

Notes

For extra flavor, consider browning the chicken before placing it in the Crockpot. You can also add veggies like broccoli or bell peppers to the pot.
