  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth Choose high-quality for best flavor
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 tsp thyme
  • to taste Salt and pepper
  • Fresh parsley for garnish

Preparation

  • Start by placing the chicken breasts at the bottom of the slow cooker.
  • Add in the chicken broth, diced carrots, diced celery, chopped onion, minced garlic, lemon juice, lemon zest, thyme, and a pinch of salt and pepper.
  • Cover and set your slow cooker to low for 6-8 hours or high for 4-5 hours.
  • Once the chicken is fully cooked, shred it directly in the pot with two forks.
  • Give everything a good stir to combine, tasting and adjusting the seasoning as desired.
  • Serve it hot, garnished with freshly chopped parsley.

Notes

For added texture, serve with crusty bread or over rice. You can also add more vegetables like spinach or zucchini towards the end of cooking for extra nutrition.
