  • 1 cup orzo pasta

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
  • Stir in the minced garlic and cook for an additional minute until fragrant.

Cooking the Soup

  • Pour in the chicken broth and bring it to a boil.
  • Add the orzo pasta and cook according to the package instructions until al dente.
  • Stir in the shredded chicken and fresh lemon juice.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.

Notes

This soup can be stored for 3-4 days in the fridge or frozen for up to 3 months. Reheat on the stovetop, adding water or broth if it’s too thick.
