Base Ingredients

  • 2 tablespoons olive oil For sautéing

Broth and Seasonings

  • 4 cups vegetable broth Use homemade for richer flavor
  • 1 can (14.5 oz) diced tomatoes Adds acidity and texture
  • 1 teaspoon dried thyme Herb for flavor
  • 1 teaspoon dried basil Herb for flavor
  • to taste Salt and pepper For seasoning
  • 1 leaf bay leaf Adds flavor during simmering

Vegetable Additions

  • 2 cups mixed vegetables (e.g., spinach, zucchini, green beans) Substitute based on preference

Instructions
 

Cooking

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onions, diced carrots, and diced celery. Sauté these for about 5-7 minutes or until they look softened and fragrant.
  • Stir in the minced garlic and cook for an additional minute.
  • Pour in the vegetable broth, then add in the diced tomatoes, thyme, and basil. Season with salt and pepper to taste.
  • Toss in your mixed vegetables and add the bay leaf.
  • Bring everything to a boil, then reduce the heat and let it simmer for 20-30 minutes.
  • Don’t forget to remove the bay leaf before serving!

Notes

For a richer flavor, use homemade vegetable broth. Experiment with different herbs and spices based on your taste. This soup can be made in a slow cooker by combining all ingredients and cooking on low for 6-8 hours.
