Healing Spanish Chicken Soup

Ingredients
  

Main Ingredients

  • 2.2 lbs free-range chicken (whole or assorted cuts) Use fresh chicken for better flavor.
  • 4 medium potatoes, peeled
  • 2 medium carrots, peeled Cut into halves for better cooking.
  • 2 medium leeks, trimmed
  • 1 large brown onion, halved Optional to discard after cooking.
  • 1 stalk celery, trimmed Trim any unwanted leaves.
  • 4 cloves garlic, peeled
  • ½ inch piece of ginger, peeled
  • 4 leaves bay leaves
  • 1 handful fresh parsley, chopped For garnish.

Spices and Seasoning

  • ¼ teaspoon turmeric
  • 1 teaspoon black peppercorns Adjust to taste.
  • 1 ½ teaspoons sea salt Adjust to taste.

Pasta

  • 1 cup fideo noodles or angel hair pasta Any short pasta can be used.

Instructions
 

Preparation

  • Start by peeling the potatoes, carrots, onion, ginger, and garlic. Trim the leeks and remove any unwanted celery leaves. Cut the carrots, leeks, and onion in half to fit better in your pot.

Cooking the Broth

  • In a large pot, place the chicken and all the prepared vegetables along with bay leaves, turmeric, black peppercorns, and salt.
  • Fill the pot with water until everything is submerged. Cover it, bring to a boil over high heat, then lower it to a simmer. Let it cook for at least 120 minutes.
  • Taste halfway through and adjust the seasoning as needed.

Finishing the Soup

  • Carefully remove the chicken, potatoes, carrots, and leeks once simmered to your liking. Discard the bay leaves and onion (if desired). Shred the chicken off the bones and strain the broth through a fine mesh strainer.
  • Chop the boiled vegetables into bite-sized pieces and return them to the broth along with shredded chicken.
  • Bring everything back to a boil and add your fideo noodles or angel hair pasta. Cook according to the package instructions.

Serving

  • Ladle generous servings of soup into bowls and top with freshly chopped parsley. Enjoy!

Notes

Pair with crusty bread or a light salad for a complete meal. A sprinkle of extra parsley or chili oil can enhance flavors. Customize your veggies and herbs as desired.
