  • 2 cups grated carrots Freshly grated carrots retain more moisture and flavor.
  • 1 cup whole wheat flour Can substitute with all-purpose or gluten-free flour.
  • 1/2 cup unsweetened applesauce Brings natural sweetness.
  • 1/4 cup honey or maple syrup Can use other sweeteners like agave or coconut sugar.
  • 1/4 cup low-fat yogurt For a vegan version, use plant-based yogurt.
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup vanilla ricotta cheese Can substitute with cream cheese for richer taste.
  • 1 tsp vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour a cake pan.
  • In a large mixing bowl, stir together the grated carrots, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In a separate bowl, blend the applesauce, honey (or maple syrup), and yogurt until fully combined.
  • Pour the wet ingredients into the dry mixture and stir gently until just combined—do not overmix!
  • Transfer the batter into the prepared cake pan and smooth the top with a spatula.

Baking

  • Bake for about 30-35 minutes or until a toothpick inserted into the center comes out clean.

Frosting

  • While the cake is cooling, prepare the vanilla ricotta frosting by mixing the ricotta cheese and vanilla extract until smooth and creamy.
  • Once the cake is completely cooled, spread the frosting generously over the top, slice, and serve!

Notes

Store the cake in an airtight container in the refrigerator for up to 5 days. For individual servings, consider freezing slices wrapped in plastic and foil.
