  • 1 pound ground beef Can substitute with ground turkey for a lighter option.
  • 1 tablespoon olive oil For browning the beef.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4-5 medium potatoes, thinly sliced Thinly slicing ensures even cooking.
  • 1.5 cups shredded cheddar cheese Feel free to swap with your favorite cheese.
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon paprika
  • Salt and pepper (to taste)
  • 0.5 cup beef broth Or water if broth is unavailable.
  • 0.25 cup milk Optional, for added creaminess.
  • Fresh parsley, chopped Optional garnish.

Preparation

  • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  • In a large skillet over medium heat, heat the olive oil. Add the ground beef and cook for 5-7 minutes, breaking it apart until fully browned. Drain excess fat if needed.
  • Stir in the chopped onion and minced garlic. Cook until the onion is softened, about 3-4 minutes. Remove from heat.

Layering and Baking

  • Spread the beef mixture evenly in the bottom of the prepared baking dish.
  • Layer the thinly sliced potatoes over the beef, slightly overlapping them for even cooking.
  • Season the potatoes with salt, pepper, Italian seasoning, and paprika.
  • Sprinkle the cheddar and Parmesan cheeses evenly over the top.
  • Pour the beef broth around the edges of the dish. Drizzle with milk if you desire more creaminess.
  • Cover the dish with foil and bake for 30 minutes.
  • Remove the foil and continue baking uncovered for 15-20 minutes, until the potatoes are tender and the cheese is golden and bubbly.
  • Garnish with chopped parsley if desired, and serve hot.

Notes

This casserole holds up well in the fridge, making it a great candidate for leftovers throughout the week. For best results, let the casserole sit for a few minutes before serving to allow it to set.
