  • 2 pounds medium-sized chicken breasts (about 4) or 2 large chicken breasts cut in half horizontally
  • 1 teaspoon garlic powder Use fresh spices for best results.
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried mustard
  • 1/2 teaspoon chili powder (optional) Add for a bit of heat.
  • 1 1/2 teaspoons kosher salt (or to taste)
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil or avocado oil

Preparation

  • Preheat your oven to 425 degrees Fahrenheit and lightly grease a large baking dish or rimmed baking sheet.
  • Using a meat pounder or rolling pin, pound the thickest part of each chicken breast until they’re roughly the same thickness.
  • Alternatively, you can cut larger chicken breasts in half to create thinner pieces.
  • Place the chicken breasts in a bowl and toss them with all the spices and olive oil (or avocado oil) until they are well-coated.
  • Transfer the chicken breasts to your greased baking dish, ensuring they are evenly spaced apart.

Cooking

  • Bake for 18-20 minutes, or until the chicken is fully cooked and the internal temperature reaches 165 degrees Fahrenheit.
  • Let the chicken rest for a few minutes. Then slice, brush with pan juices, and serve.

Notes

To achieve the juiciest results, pound your chicken breast evenly and don’t skip the resting stage after baking. Consider marinating the chicken in the seasoning mix for a couple of hours for deeper flavors.
