  • 1 cup granulated sugar Brown sugar can be used as a substitute.
  • 1/2 cup butter, melted Can be substituted with coconut oil for a dairy-free option.
  • 2 large eggs Can be replaced with flaxseed meal or applesauce.
  • 1 tablespoon lemon zest Lime or orange zest can be substituted.
  • 1/4 cup lemon juice Fresh lemon juice is preferred, bottled can be used in a pinch.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for dusting (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  • In a mixing bowl, combine the melted butter and granulated sugar. Mix until they achieve a smooth consistency.
  • Add in the eggs, lemon zest, lemon juice, and vanilla extract. Stir until everything is well combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined.
  • Pour the batter into the prepared baking pan, spreading it evenly across the surface.

Baking

  • Bake for 20-25 minutes. You’ll know they’re done when a toothpick inserted in the center comes out clean.
  • Once baked, allow them to cool before cutting into squares, and dust with powdered sugar if desired.

Notes

Store in an airtight container at room temperature for up to 3 days. Freeze wrapped in plastic for up to 2 months. Warm in the microwave before serving if necessary.
