Ingredients
  

For the crumble

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar Can substitute with coconut sugar.
  • 1/2 cup butter, melted Can use coconut or vegetable oil for a vegan option.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the filling

  • 1 cup lemon curd Can substitute with fruit preserves or homemade compote.
  • 1 tablespoon lemon zest For added flavor.

Preparation

  • Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  • In a large bowl, mix together the rolled oats, flour, brown sugar, melted butter, baking soda, and salt until the mixture is crumbly.
  • Take half of this mixture and press it firmly into the bottom of your prepared baking dish.
  • Evenly spread the lemon curd over the oat mixture.
  • Sprinkle the remaining crumble mixture on top, ensuring an even distribution.

Baking

  • Bake in the oven for 25-30 minutes, or until the top is golden brown.
  • Allow the bars to cool before cutting them into squares.

Notes

Dust with powdered sugar when serving. Pair with whipped cream or ice cream for an elevated dessert experience. Can store in an airtight container for up to three days or freeze for up to two months.
