  • 2 pieces boneless, skinless chicken breasts
  • 8 oz pasta (penne or fusilli)
  • 1 cup heavy cream Can substitute with half-and-half for a lighter option
  • 1 cup chicken broth
  • 1 cup cherry tomatoes, halved Can substitute with grape tomatoes or canned diced tomatoes
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 cups spinach Can substitute with kale
  • 1 tbsp olive oil
  • to taste salt and pepper Don’t forget to season the chicken well
  • optional red pepper flakes For added heat

Preparation

  • Cook the pasta according to package instructions. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper before adding them to the skillet. Cook for about 6-7 minutes, until browned and cooked through. Remove from the skillet and slice.
  • In the same skillet, add minced garlic and cook for 30 seconds until fragrant. Then, add the cherry tomatoes and cook until they start to burst.
  • Pour in the chicken broth and heavy cream; stir to combine. Bring to a gentle simmer, then add spinach and Parmesan cheese, stirring until the sauce thickens slightly.
  • Add the cooked pasta and sliced chicken back into the skillet, and toss everything together.
  • Serve warm, garnished with red pepper flakes if desired.

Notes

For best presentation, plate the pasta in shallow bowls and consider adding extra Parmesan and a drizzle of olive oil on top.
