  • 4 pieces boneless, skinless chicken breasts Ensure they are even in thickness.
  • 1/4 cup olive oil Can substitute with coconut oil if desired.
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chicken broth Can replace with vegetable broth or white wine.
  • 2 tablespoons butter

Preparation

  • Ensure your chicken breasts are even in thickness. If they’re too thick, butterfly them or use a meat mallet gently.
  • In a small bowl, mix the garlic powder, onion powder, thyme, rosemary, paprika, salt, and black pepper. Generously rub this seasoning mix onto both sides of the chicken breasts.

Cooking

  • Pour olive oil into a large skillet and heat it over medium-high heat. Once hot, add the seasoned chicken breasts. Cook for about 4-5 minutes on each side until golden brown.
  • Reduce the heat to low. Add the chicken broth and butter into the skillet.
  • Cover the skillet and allow the chicken to simmer for 10-12 minutes until fully cooked through.

Serving

  • Remove the chicken from the skillet and let it rest for a few minutes before slicing.

Notes

Serve over rice or mashed potatoes; pair with roasted vegetables or a crisp salad. Store leftovers in an airtight container in the refrigerator for up to 3 days.
