  • 2 cups chicken broth
  • 1 cup heavy cream Can substitute with coconut cream for a dairy-free option.
  • 1 cup grated Parmesan cheese Nutritional yeast can be used as a dairy-free alternative.

Seasonings

  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions
 

Cooking

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced chicken, seasoning it with salt and pepper. Cook until golden brown.
  • Stir in the minced garlic, cooking for another minute until fragrant.
  • Add the penne pasta along with the chicken broth and bring it all to a boil.
  • Reduce the heat, cover, and let it simmer for about 10-12 minutes, until the pasta is tender.
  • Stir in the heavy cream and Parmesan cheese, mixing until the sauce is smooth and creamy.
  • Garnish with chopped parsley before serving.

Notes

Ideal to serve with a crisp side salad or garlic bread. This dish keeps well in the fridge for 3-4 days, store in an airtight container.
