  • 2 tablespoons honey or agave syrup Swap honey for agave syrup for a vegan option.
  • to taste salt and pepper Season according to taste.
  • to taste fresh mint leaves for garnish Adds flavor and a pop of color.

Preparation

  • In a large bowl, toss together the diced pineapple and sliced cucumbers until mixed.
  • In a separate small bowl, whisk together fresh lime juice and honey until well combined.
  • Drizzle the lime dressing over the pineapple and cucumber mixture and toss gently to combine.
  • Season the salad with salt and pepper to taste.
  • Garnish with fresh mint leaves and serve chilled.

Notes

Store leftovers in an airtight container in the refrigerator and consume within 2-3 days. Freezing is not recommended. For a fun presentation, consider serving individual servings in small cups.
