  • 2 pounds boneless, skinless chicken thighs or breasts
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth Use low sodium for a healthier option
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste Salt and pepper
  • 1 cup green peas (optional) Add in the last 30 minutes of cooking

Preparation

  • Start by placing the chicken, onion, carrots, potatoes, celery, and garlic in the slow cooker.
  • Pour in the can of diced tomatoes along with the chicken broth.
  • Sprinkle in the dried thyme, rosemary, salt, and pepper.
  • Give everything a good stir to combine.
  • Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours.
  • If you’re adding peas, stir them in during the last 30 minutes of cooking.
  • Once done, serve hot and enjoy.

Notes

Consider serving with a crusty loaf of bread, salad, or steamed green veggies. For extra flavor, season the chicken beforehand or brown it first. You can also customize the recipe by swapping in your favorite vegetables.
