  • 4 pieces boneless, skinless chicken breasts Can use frozen chicken breasts, adjust cooking time as needed.
  • 4 cups chicken broth Can substitute with vegetable broth or water.
  • 3 pieces carrots, sliced Feel free to use seasonal vegetables.
  • 3 pieces potatoes, diced Any type of potatoes can be used.
  • 1 piece onion, chopped Provides a savory base.
  • 2 cloves garlic, minced Sauté with onion for more flavor.
  • 1 teaspoon dried thyme Fresh herbs can also be used.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil For sautéing the vegetables.
  • 1 cup frozen peas Add in the last 30 minutes of cooking.

Preparation

  • In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until transparent.
  • Transfer the sautéed onion and garlic to the slow cooker.
  • Add the chicken breasts, chicken broth, sliced carrots, diced potatoes, thyme, salt, and pepper to the slow cooker.
  • Cook on low for 6-8 hours or on high for 4-5 hours.
  • About 30 minutes before serving, stir in the frozen peas.
  • If desired, shred the chicken before serving for a more rustic style.

Notes

Serve with fresh herbs, crusty bread, or fluffy rice. Leftovers can be stored for up to three days in the refrigerator or frozen for longer storage.
