  • 2 pieces Chicken breasts Grilled or rotisserie chicken can be used.
  • 1 can Black beans Rinsed and drained.
  • 1 cup Sweet corn Fresh, frozen, or canned; thaw if frozen.
  • 4 cups Romaine lettuce Chopped.
  • 1 piece Avocado Diced.
  • 1 cup Cherry tomatoes Halved.
  • 1/2 cup Chipotle-lime dressing Store-bought or homemade.

Instructions
 

Preparation

  • Grill the chicken breasts until fully cooked and slice into strips.
  • In a large bowl, combine black beans, sweet corn, chopped romaine lettuce, diced avocado, and halved cherry tomatoes.
  • Add the grilled chicken strips on top of the salad mix.
  • Drizzle with the smoky chipotle-lime dressing.
  • Gently toss everything together and serve immediately.

Notes

Serve family-style or plated for elegance. Pair with tortilla chips or crusty bread. Store leftovers in an airtight container in the fridge for up to 3 days, keeping the dressing separate until serving.
