  • 1 lb ground beef Can be swapped for turkey.
  • 1 can (10.5 oz) cream of mushroom soup Can substitute with cream of chicken soup.
  • ½ cup sour cream Use low-fat to lighten up.
  • 1 small onion, diced Add more for extra flavor if desired.
  • 2 cups shredded cheddar cheese, divided Can substitute with other cheese varieties.
  • 1 bag (32 oz) frozen tater tots Ensure they are gluten-free if necessary.
  • Salt and pepper, to taste Add optional seasonings like garlic powder or paprika.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, brown the ground beef. Add diced onions and cook until softened. Season with salt, pepper, and optional spices.
  • Drain any excess fat and stir in the cream of mushroom soup and sour cream. Cook for another 2-3 minutes until heated through.
  • Lightly grease a casserole dish and spread the beef mixture evenly across the bottom.
  • Sprinkle 1 cup of shredded cheddar cheese over the beef mixture.
  • Arrange the frozen tater tots in a single layer on top of the cheese.
  • Bake for 25-30 minutes, or until the tater tots are golden and crispy.
  • Remove from the oven, top with the remaining cheese, and bake for an additional 5 minutes until melted and bubbly.
  • Let cool for 5 minutes before serving.

Notes

Store leftovers in the refrigerator for 3-4 days. For freezing, wrap well and store up to 3 months. Reheat in the oven at 350°F for best results.
